I was hoping this meal would've made for a good first post on our new food blog, but I'm afraid it was a little too bland, you know... for a first post. We'll get something on there soon :)
Anyway, If any of you are still interested (after me telling you that it was bland, ha)- we made (Mikey made, and I took pictures of) Broiled Tofu with Quinoa & Green Beans for dinner tonight. We basically followed the Broiled Black Pepper Tofu recipe in the Martha Stewart cookbook that we got for Christmas, but opted for olive oil instead of sesame oil, and didn't do the lemon-sauce thing.

It was good, don't get me wrong. But the tofu probably would've been better with a spicy/ethnic side dish (like Martha Stewart suggested) instead of boring quinoa. The quinoa was good too, surprisingly, because it was the first time we made it (or ate it, actually). And of course, we're still working off our supply of frozen green beans...

Regardless of any blandness this meal had, it was still very healthy!
P.S. Mikey and I both agree that tofu actually kind of tastes like cooked egg whites, and I don't mind that at all. Quinoa tastes a lot like couscous, just grainier.

I'm not going to post a recipe with this, because (if you even still want to make it) you can basically follow the Martha Stewart directions, and also there's a decent how-to cook quinoa post right here. And you all should know how to cook green beans by now.
